Catering to the global luxury traveler’s desire for cultural connection, the second ultra-luxury superyacht from The Ritz-Carlton Yacht Collection will introduce five restaurants, seven bars, and a wine vault, each curated to deliver the highest level of culinary excellence
Fort Lauderdale, FL – June 5, 2024 – Building on its commitment to exceptional guest experiences, The Ritz-Carlton Yacht Collection unveils an array of innovative culinary offerings aboard Ilma, the eagerly anticipated second ultra-luxury superyacht in its fleet. Slated to set sail on its maiden voyage from Monte Carlo to Rome on September 2, 2024, Ilma invites guests to discover five versatile dining venues, a refreshed in-suite dining program, seven bars, and a signature wine vault, each promising exquisite culinary delights.
New highlights include Seta su Ilma by Chef Fabio Trabocchi, a modern Italian fine-dining restaurant, and the Beach House, a vibrant open-air eatery featuring a Pan-Latin and Caribbean menu created in collaboration with Chef Michael Mina. Notably, this marks both Chef Trabocchi’s and Chef Mina’s first ventures at sea. These concepts will complement Memorī, which will serve contemporary Pan-Asian dishes; Mistral, which will offer Mediterranean flavors; and Tides, which will present a regionally inspired menu. A well-rounded beverage program throughout the yacht will enhance all dining experiences.

With a distinctive mix of intimate specialty restaurants and casual poolside eateries, the dining and beverage offerings aboard Ilma provide a breadth of options to satisfy every palate. Creative menus reflect global inspirations while showcasing the finest ingredients, transporting guests around the world. Guests will embark on a sensory journey with an extensive cocktail menu, shaped by the breathtaking shores and charming landscapes of the ports of call where Ilma will sail, complete with a selection of premium nonalcoholic options. Sophisticated interiors cultivate a serene ambiance, while alfresco spaces embrace life on the water, allowing guests to enjoy the fresh sea air and panoramic views of stunning coastlines and majestic oceans.
Drawing inspiration from Fabio Trabocchi’s Italian heritage and expertise in Italian cuisine, Seta su Ilma, named after the Italian word for “silk,” will emerge as a premier dining destination. Seasonal tasting menus will feature a contemporary interpretation of Italian cuisine, nodding to regional flavors. Dishes will range from fresh seafood to homemade pasta, all impeccably paired with fine wines. Delectable accompaniments from the Amalfi Coast will further enhance the warm dining experience. A deep cellar of Italian whites and reds will form the core of the wine list. Seta su Ilma will welcome diners each evening with a seven-course tasting menu, while on select afternoons, lunch with a five-course tasting menu will also be offered. This specialty dining experience aboard the yacht is exclusively available to guests for an additional fee, with an optional wine pairing available.

Ilma will offer a comprehensive selection of dining options and premium beverages included in the fare for a multifaceted and enriching culinary journey. At the Beach House, bright, airy interiors will flow into an expansive outdoor pool deck, creating an effervescent setting for enjoying Pan-Latin cuisine alongside craft beers, bold wines, and an elevated tequila selection. This beach club-inspired venue will meld globally influenced flavors in a relaxed yet upscale atmosphere, perfect for unwinding and connecting. The menu, developed in collaboration with James Beard Award-winning chef Michael Mina, will be inspired by the bold, fire-born flavors of South and Central America while highlighting ingredients from the Caribbean with light, refreshing shareable bites, such as grilled meats, seafood, and ceviche.
“The Beach House will be the ultimate culinary complement to Ilma,” said Michael Mina, notable chef and founder of The Mina Group, which manages over 30 chef-driven concepts across the country, showcasing the best of food, wine, and spirits. “I have always been fascinated with the powerful flavors and vibrant energy of the countries that make up Latin America and the Caribbean, and I have dreamed of bringing an array of their ingredients together one day. I am thrilled to be collaborating with The Ritz-Carlton Yacht Collection to introduce this new restaurant to Ilma’s guests.”
Guests at the Beach House can indulge in lunch and dinner, as well as signature brunch events, enhanced by lively programming in a dynamic blend of spaces, including an inviting outdoor splash pool furnished with sun loungers, pool chairs, lounge seating, and dining areas. As night falls, the energetic venue will evolve into an intimate evening retreat, with Latin-inspired live music, percussionists, and nightly sunset rituals.
In addition to these two new culinary concepts, Ilma will feature Memorī, Mistral, and Tides. Memorī
will bring a modern spin to authentic Pan-Asian cuisine in a sleek environment anchored by an open twelveseat sushi bar. Whether it’s lunch or dinner, guests can savor a diverse array of composed plates with bold flavors and creative ingredients, from Japanese bar snacks, sashimi, and tempura to dumplings and Wagyu cuts, all within a sophisticated setting with both indoor and outdoor seating. A selection of sake, Champagne, Japanese whiskeys, and plum wines will accompany the inventive dishes.
Located just steps from the main pool on Deck 10, Mistral will celebrate timeless Mediterranean fare with traditional breakfast dishes in the morning, followed by handmade pastas and pizzas, crisp salads, and fresh seafood, along with grilled steaks and chops complemented by an extensive wine list as the day cascades to evening. A picturesque perch for a casual lunch, romantic dinner, or cocktail overlooking the water, this indoor/outdoor venue will offer some of the best views on the yacht.
Tides will offer seasonal menus inspired by the diverse regional flavors and techniques of the destinations that Ilma explores, evolving throughout the voyage. For Ilma’s inaugural season in the Mediterranean, the menu will capture elements of Greek, Italian, and Spanish regional cuisines. As Ilma makes the crossing to the Caribbean, the menu will transform to feature elements of the Florida Keys, Bahamas, Puerto Rico, and the Southern Caribbean islands. Nestled behind Tides and Seta su Ilma, Dining Privée will provide an intimate and elegant enclave for celebratory dinners and other special events, which can be arranged for an additional fee.
At the heart of Ilma will sit The Living Room, a welcoming space where guests can greet the day with freshly roasted coffee and baked pastries at the espresso counter each morning. As the day progresses, The Living Room Bar will pour specialty cocktails, fine wines, and Champagne accompanied by a live pianist. In the evening, it will transform into an ideal spot for enjoying canapés and an aperitif before dinner followed by late-night entertainment. When guests wish to dine in the comfort of their suite or on their private terrace, they can delight in comforting In-Suite Dining options. These menus encompass breakfast, all-day, and evening selections offering a variety of classics from the different onboard restaurants.
Ilma, measuring 790 feet (241 meters), will feature 224 spacious suites with sprawling sea views, accommodating up to 448 guests. The yacht’s interior will showcase contemporary craftsmanship and refined finishes, envisioned by the renowned London-based architectural and design firm AD Associates, award-winning lighting designer DPA, and Chapi Chapo Design, who collaborated on the Beach House. Its sleek exterior design, expertly crafted by Helsinki-based design studio Aivan, draws inspiration from the elegant aesthetics of private yacht design.
